Flavor Profile: Pinto Gold potatoes boast a smooth, buttery yellow flesh that is not just visually appealing but also a treat for the palate. They are known for their mild, moist texture, making them excellent for roasting. However, their versatility extends to boiling, pan-frying, and even salads. The unique combination of red and yellow skin alongside the yellow flesh creates an attractive dish, perfect for those who love experimenting with their cooking. While not ideal for French fries due to their smaller size, they are perfect for creating delicious, pan-fried potato dishes.
History: The Pinto Gold potato's journey began with a cross between two cultivars in a USDA potato breeding program in Idaho back in 2006. It was later sent to the University of Maine for further development and was released in 2018 as part of a series of successful potato varieties developed by the university. This variety has quickly become a favorite among organic growers and is highly appreciated for its distinctive appearance and excellent yield in cool, northern growing areas.
