Released by Louisiana State University in 2013, Purple Majesty is the reigning king of purple-fleshed sweet potatoes. It combines intensely dark-purple (almost black) skin with a breathtaking, uniform royal-purple flesh that stays vividly colored after baking, boiling, steaming, or roasting. The flavor is rich, mildly sweet with earthy, almost chestnut-like undertones — never watery and far more sophisticated than orange types. Its moist-yet-firm texture makes it incredible baked whole, mashed, turned into vibrant purple gnocchi or fries, or added to soups and curries where the color and taste both shine.

Simple Growing Instructions
- Plant after all danger of frost when soil temperatures reach 65 °F+ (mid-to-late spring)
- Full sun and loose, well-drained soil (pH 5.8–6.5); raised beds or ridges work perfectly
- Space slips 10–18 inches apart (12–15 inches is ideal for maximum marketable size)
- Rows 36–48 inches apart (fits nicely on 42–48-inch beds)
- Bury roots and lower stem nodes 3–4 inches deep, leaving leaves above soil
- Keep evenly moist until established, then moderate water — tolerates heat and short dry spells
- No hilling required — sweet potatoes set roots along the vine
- Harvest in 110–130 days when vines begin yellowing (dig before heavy frost)
- Cure 7–14 days at 80–85 °F and high humidity, then store at 55–60 °F
